The hardest part about this was pulling the chicken from the rotisserie... so basically, this is super easy and was incredibly tasty.

Preheat oven to 400 degrees F.

Pull chicken from Rotisserie Chicken; I only used white meat mainly from the breast and the thighs. My husband loves chicken wings so I left those separate for him.

Fill coconut wraps with pulled chicken.

Place wraps into a regular 9x13 cake sheet pan. I lined my pan with tin foil for easy clean up.

Pour enchilada mix on top of your wraps and bake for 8-12 minutes - watch the tops because it's easy for the coconut wraps to burn.

Serve with favorite sides - pictured here is a side of Amy's Organic Refried Beans.
